A classic dessert that perfectly balances tartness and sweetness in every bite with a rich lemon filling and a fluffy meringue topping.

Ingredients

  • 200 g Graham crackers (for crunch and base flavor)
  • 100 g melted butter (to bind the crust)
  • 50 g sugar (to add sweetness to the crust)
  • 4 eggs, separated
  • 300 ml sweetened condensed milk (for creaminess)
  • 150 ml fresh lemon juice (for tartness)
  • Zest of 2 lemons (for an extra citrus kick)
  • 4 egg whites (to create volume)
  • 200 g sugar (for sweetness and stability)
  • 1 teaspoon lemon juice (to help achieve stiff peaks)

Instructions

  1. Prepare the oven and crust: Preheat the oven to 180°C (350°F). In a large bowl, combine the Graham cracker crumbs, melted butter, and sugar. Mix until the ingredients are well combined. Press the mixture evenly into the bottom of a pie dish to form the crust. Bake for 10 minutes until lightly golden.
  2. Make the lemon filling: In another bowl, whisk the egg yolks until pale. Add the sweetened condensed milk, lemon juice, and lemon zest, mixing until smooth. Pour the lemon filling into the baked crust, spreading it evenly.
  3. Prepare the meringue: In a clean mixing bowl, beat the egg whites until foamy. Gradually add the sugar and lemon juice while continuing to beat until stiff peaks form. Be careful not to overbeat; the texture should be fluffy but not dry.
  4. Assemble the pie: Spread the meringue evenly over the lemon filling, ensuring that it seals the edges to prevent shrinking. Use the back of a spoon to create decorative peaks in the meringue.
  5. Bake the meringue: Place the assembled pie back in the oven and bake for about 10 minutes or until the meringue is golden brown. Keep an eye on it to prevent burning.
  6. Cool and serve: Once baked, allow the pie to cool before slicing. This helps the filling set properly, making it easier to serve.

Notes

For best results, make sure your bowl and beaters are clean and chilled before whipping the egg whites. Use fresh lemons for the best flavor.
