Ingredients
4 cups chicken broth
1 cup cooked chicken, shredded
2 packets of ramen noodles
1 cup baby spinach
2 green onions, sliced
2 tablespoons soy sauce
1 tablespoon sesame oil
1 carrot, julienned
Salt and pepper to taste
1 boiled egg (optional)
Instructions
Sauté the Chicken: In a large pot, heat the sesame oil over medium heat. Add the shredded chicken and sauté for a few minutes until heated through.
Add the Broth: Pour in the chicken broth and bring it to a simmer.
Cook the Noodles: Add the soy sauce, carrots, and ramen noodles to the pot. Cook for about 3-5 minutes, or until the noodles are tender but still firm.
Add Greens: Stir in the baby spinach and green onions, cooking just until the spinach starts to wilt.
Season and Serve: Taste the broth and adjust the seasoning with salt and pepper as needed. Serve hot, topped with a boiled egg if desired.
Notes
Store leftovers in an airtight container for up to 3 days. Best enjoyed fresh to keep noodles from becoming mushy.
